This recipe pays homage to the wonderful lettuce wraps at PF Chang’s. The big difference is our family likes to use beef instead of chicken. You can use beef, pork, chicken or even shrimp and they will be a big hit for your entire family. We do not add extra sugar either, but some people might like the added sweetness of a little brown sugar and/or ketchup. These are very tasty, but also very messy!
Tasty Beef Lettuce Wraps
¼ cup gluten-free tamari or soy sauce
¼ cup sesame oil
2 TBS honey or agave
1/8 tsp cayenne pepper
1 tsp sea salt
¼ cup sliced water chestnuts, drained and rinsed
1-2 cloves garlic, finely chopped
6-7 fresh green onions, finely chopped
1 pound rib-eye beef, chopped into small ½ inch cubes
6 Romaine or Butter lettuce leaves
Mix first 8 items together in small bowl and pour over the chopped rib-eye beef. Marinate for at least 2 hours or overnight. Heat large skillet over medium-high heat and stir-fry marinated beef, stirring frequently (about 8-10 minutes). Set aside to cool.
Once cooled, fill lettuce leaves with beef mixture and enjoy!
(You can experiment with corn tortillas instead of lettuce if your family prefers. Sometimes I wrap a corn tortilla on the outside of the lettuce to help keep the mixture contained.)
